Farewell Winter? Lord I hope so. I don’t know about anyone else out there but I am D-O-N-E. Like stick a fork in me done. Can not handle this grey, bleak, cloudy, depressing winter one second longer. Mama needs a serious warm front. Stat. So when I saw that Claire from My Table is having a Farewell Winter Pop Up what’s a girl to do? I’ll tell you what. Sign up that’s what. Beat those winter blues away with a broom. Sweep them right out the door and let the sunshine roll right on in. Do I think that’s all going to happen by March 10th? No, but a girl can dream can’t she?
So lets say goodbye to winter in style. A final au revoir to the root vegetables, comforting lentils, and soul warming meats. One more night of celebration to the hearty wholesome wintry wonderful dishes before we usher them out in exchange for crisp asparagus and tender peas. On March 10th at Fraiche we come together for a final farewell filled with all the winter flavors we love and have kept us alive and warm for the past four months.
Claire is a repeat offender to the Pop Up scene. I have been lucky enough to not only attend some of her pop ups and stations at the monthly Neighborhood Food Market, but have also had the pleasure of assisting her in the kitchen. Claire is not only a brilliant chef but her dishes are aligned with the way I cook: seasonal, balanced, healthy and fresh. Claire’s multicultural cooking is heavily influenced by her chef’s training in Sydney Australia where migrants from all over the world have brought their food traditions with them. Well, that and 15 years of traveling and eating.
My Table came about as a way to introduce some of the more unusual, rustic dishes or less well-known cuisines with a wider Amsterdam audience. Her day job running a catering company consists mostly of fine dining catering and doesn’t leave much of a place for the kinds of meals she would cook at home for friends. So that’s where My Table comes in. My Table gives Claire a chance to keep it more casual, experiment with new dishes, and feed guests who become part of her table a 5 course tasting menu, usually around a culinary theme. The pop ups are usually about once a month, depending on how busy Empire Fine Food (her catering company) is at the time and whether there is a suitable venue is available. Next weeks dinner is at Restaurant Fraiche on a Sunday when the restaurant is usually closed. And the theme fits the venue as Fraiche is a “gezellig” 36 seater gem in the Jordaan.
So what can we expect from Claire and the crew at My Table on Sunday March 10th? Well it will be Mediterranean provincial mix of Basque, Sevillian, Atlas Mountains, Neapolitan and the Porto coast…..an ode to the end of the cold season.

Brandade with toast + roast peppers, caper berry and parsley
Chorizo and chestnut soup with almond pistou and crusty bread
Smoked duck, blood orange and witlof salad with roast beetroot
Oven roasted dorade on warm lentils, fennel and roast potatoes
with Oloroso sherry
Santiago tart with warm crème anglaise
